Equipment

  • 1 Large Skillet For cooking the sauce and chicken
  • 1 Pot For boiling pasta
  • 1 Wooden Spoon For stirring the sauce
  • 1 Colander For draining the pasta

Ingredients
  

  • 2 cups Cooked Chicken Rotisserie or sautéed shredded
  • 12 oz Pasta Penne or fettuccine recommended
  • 2 tbsp Olive Oil For sautéing
  • 3 cloves Garlic Minced
  • ½ cup Sun-Dried Tomatoes Chopped
  • 1 tbsp Tomato Paste Adds depth of flavor
  • ½ cup White Wine Optional can substitute with chicken broth
  • 1 cup Heavy Cream Can use crème fraîche or half-and-half
  • ¾ cup Parmesan Cheese Grated
  • 1 tsp Italian Seasoning Or a mix of basil oregano, thyme, and rosemary
  • ½ tsp Red Pepper Flakes Optional for a spicy kick
  • 1 cup Fresh Spinach Or substitute with kale or arugula
  • To taste Salt & Pepper Adjust as needed

Instructions
 

  • Step 1: Prepare Ingredients
  • Chop garlic, shred Parmesan cheese, and measure out all ingredients for an easy cooking process.
  • Step 2: Cook the Chicken
  • If using raw chicken, season with salt, pepper, and Italian seasoning.
  • Heat olive oil in a large skillet over medium-high heat and sear chicken until golden brown.
  • Remove chicken from the skillet and set aside.
  • Step 3: Make the Sauce
  • In the same skillet, add minced garlic and sauté until fragrant.
  • Stir in sun-dried tomatoes, tomato paste, and white wine (or chicken broth).
  • Let the sauce simmer for 2–3 minutes to reduce and develop flavors.
  • Step 4: Add Cream and Cheese
  • Lower heat and pour in heavy cream, stirring continuously.
  • Add grated Parmesan cheese and mix until smooth and creamy.
  • Step 5: Combine Everything
  • Return the cooked chicken to the skillet and toss in the sauce.
  • Add cooked pasta and fresh spinach, stirring until the spinach wilts.
  • Finish with red pepper flakes (if desired) and more Parmesan.
  • Step 6: Serve & Enjoy
  • Plate the pasta and garnish with fresh basil and extra Parmesan shavings.
  • Serve immediately and enjoy!

Notes

Substitute half-and-half for a lighter version.
For a gluten-free option, use gluten-free pasta.
Can be stored in an airtight container in the fridge for up to 3 days.
